My patient Dr. Apoorva from Baku- Russia is a very passionate cook. She joined my ”Pinch to Inch Loss” program and is doing phenomenally well. Her love for fitness and workout totally reflects in her cooking. The best think I like about her is that she makes every food item at home. I’m her fan! 😀
She submitted 3 of her best recipes for snacks she has been eating on regular basis. Here goes here recipes
Recipe no 1: Eggplant walnut roll 😎
Ingredients:
Egg plant- 1 long shape
Walnut flakes- 1 cup
Garlic- 1 pod
For mayonnaise:
Milk- 100ml
Olive oil- 125ml
Lime juice- 1tsp
Salt- to taste
Garlic- for flavor
Parsley- for flavour
Preparation:
1. Cut egg plant into thin strips.
2. Drizzle salt over the stripes and keep it for marination for 5 mins.
3. On the side, prepare Mayonnaise. Add, milk, olive oil, lime juice and salt in a jar and blend it well. Add garlic, finely chopped parsley for flavor.
4. Now prepare the stuffing of the egg plant. Mix grated garlic, coarsely chopped walnuts, mayonnaise and salt.
5. Add this mixture in the centre of the eggplant strips and roll it.
6. Now keep it for baking for 5 mins till it comes crisp and golden.
7. Ready to serve.
Recipe no 2: Oats Veg Idli 😎
Ingredients:
Oats- 1 cup
Semolina- ½ cup
Yogurt- 1 cup
Onion- 1 medium
Carrot- 1
Peas- 1 bowl
Lemon juice- ½ lemon
Eno- 1tbsp
Oil- 2-3 tbsp
Mustard seeds- 1 tsp
Cumin seeds- 1 tsp
Chillies- 2
Udal dal- 1 tsp
Cashew nuts- 10-12
Curry leaves- 10Salt- to taste
Coriander leaves- for garnishing
Preparation:
1. Roast oats in a pan, cool and grind
2. Once oats are removed from this pan, use it for preparation of the filling. Add oil, mustard seeds, cumin seeds, urad dal, cashew nuts, curry leaves, and onion. Once done, add semolina into it.
3. In a bowl, add semolina mix, oats powder, yogurt, water, chopped carrot, peas, salt and coriander leaves.
4. Heat the idli cooker and grease it well.
5. Just before steaming it, add lemon juice and eno.
6. Pour batter in the idli mould and steam for 15 mins.
7. Once swollen well, serve with green chutney.
Recipe 3: Homemade Peanut butter 😎
Ingredients:
Peanut- 500 gms
Groundnut oil- 50ml
Salt to taste
Preparation:
1. Mix all the ingredoients in a mixer and grind it till it becomes a smooth paste.
2. You peanut butter is ready to eat.
